Ingredients
1 1/2 cups flour
1/2 cup spent grain flour
1 tsp cinnamon
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/3 cup softened butter
2/3 cup sugar
1/3 cup brown sugar
2 eggs
3 ripe bananas, mashed
1 tsp vanilla
1 cup blueberries
Procedure
- Preheat the oven to 350°F
- Grease and flour a loaf pan.
- In a mixing bowl mix together the flour, spent grain flour, cinnamon, baking soda, baking powder, and salt together and set aside.
- In a separate large mixing bowl beat the butter and sugars together until light and fluffy.
- Whisk in eggs, one at a time beating well after each addition.
- Add the mashed bananas to the wet ingredients then add the vanilla.
- Add the flour mixture and mix until just combined. Do not over mix.
- Gently fold in the blueberries.
- Pour batter into the prepared loaf pan.
- Bake for about 1 hour. Check doneness with a cake tester (you can use a knife or a wooden skewer). The cake is fully cooked if the tester inserted in the middle of cake comes out clean.
- Let the cake cool in the pan for at least 30 minutes.
Notes
- The butter can be easily substituted with vegetable oil.
- If you don’t have spent grain you can replace it with whole wheat flour or regular all purpose flour.
