Blueberry Banana Bread

Ingredients

1 1/2 cups flour

1/2 cup spent grain flour

1 tsp cinnamon

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1/3 cup softened butter

2/3 cup sugar

1/3 cup brown sugar

2 eggs

3 ripe bananas, mashed

1 tsp vanilla

1 cup blueberries

Procedure

  1. Preheat the oven to 350°F
  2. Grease and flour a loaf pan.
  3. In a mixing bowl mix together the flour, spent grain flour, cinnamon, baking soda, baking powder, and salt together and set aside.
  4. In a separate large mixing bowl beat the butter and sugars together until light and fluffy.
  5. Whisk in eggs, one at a time beating well after each addition.
  6. Add the mashed bananas to the wet ingredients then add the vanilla.
  7. Add the flour mixture and mix until just combined. Do not over mix.
  8. Gently fold in the blueberries.
  9. Pour batter into the prepared loaf pan.
  10. Bake for about 1 hour. Check doneness with a cake tester (you can use a knife or a wooden skewer). The cake is fully cooked if the tester inserted in the middle of cake comes out clean.
  11. Let the cake cool in the pan for at least 30 minutes.

Notes

  • The butter can be easily substituted with vegetable oil.
  • If you don’t have spent grain you can replace it with whole wheat flour or regular all purpose flour.
