Brioche Buns

Ingredients

2 1/4 tsp yeast

1 cup water

1/4 cup milk

2 1/2 tsp sugar

2 eggs

1 tsp salt

3 1/2 cups flour

3 tsp butter, softened

Procedure

  1. Warm the water and milk to about 95°F-100°F then add it to your stand mixer bowl with the yeast and sugar. Stir and let it sit for about 5 minutes.
  2. Beat 1 egg and reserve the other egg for the egg wash. Add the beaten egg to the bowl and mix.
  3. Add flour and salt then mix on slow speed with the dough hook attachment for about 10 minutes. Add the butter halfway through the mix time.
  4. Ball the dough and let it rest, covered for 1 hour or until doubled in size in an oiled bowl.
  5. Punch down the dough and ball into 9 even pieces.
  6. Line a baking sheet with parchment paper and place dough balls 2 inches apart. Flatten each ball slightly.
  7. Beat the other egg and brush each bun with half the egg wash. Cover with saran wrap and let it rise again for another hour.
  8. Preheat oven 400°F with a rack in the center and a shallow pan on the bottom rack.
  9. Remove the saran wrap and brush each bun with the remaining egg wash.
  10. Place the buns in the oven on the middle rack and fill the bottom tray with a cup of water.
  11. Bake for 15 minutes or until golden brown.
  12. Transfer to a cooling rack and let them cool completely.
