Ingredients
2 1/4 tsp yeast
1 cup water
1/4 cup milk
2 1/2 tsp sugar
2 eggs
1 tsp salt
3 1/2 cups flour
3 tsp butter, softened
Procedure
- Warm the water and milk to about 95°F-100°F then add it to your stand mixer bowl with the yeast and sugar. Stir and let it sit for about 5 minutes.
- Beat 1 egg and reserve the other egg for the egg wash. Add the beaten egg to the bowl and mix.
- Add flour and salt then mix on slow speed with the dough hook attachment for about 10 minutes. Add the butter halfway through the mix time.
- Ball the dough and let it rest, covered for 1 hour or until doubled in size in an oiled bowl.
- Punch down the dough and ball into 9 even pieces.
- Line a baking sheet with parchment paper and place dough balls 2 inches apart. Flatten each ball slightly.
- Beat the other egg and brush each bun with half the egg wash. Cover with saran wrap and let it rise again for another hour.
- Preheat oven 400°F with a rack in the center and a shallow pan on the bottom rack.
- Remove the saran wrap and brush each bun with the remaining egg wash.
- Place the buns in the oven on the middle rack and fill the bottom tray with a cup of water.
- Bake for 15 minutes or until golden brown.
- Transfer to a cooling rack and let them cool completely.
