Beetroot Hummus

Ingredients

1 can chickpeas

2 beets, small

3 tbsp tahini

2 tbsp olive oil

2 cloves garlic

2 tbsp lemon juice

1 tsp salt

1/2 tsp cumin

Procedure

  1. Roast the beets in the oven at about 400°F for about 40-50 minutes.
  2. Let the beets cool before peeling.
  3. Throw all ingredients into a food processor and blend until smooth.

Notes

  • Boiling the chickpeas with a teaspoon of baking soda will give you a smoother and silkier hummus.
  • Garnish with a drizzle of extra virgin olive oil and chopped cilantro or mint.
