
Ingredients
1 eggplant
1 garlic clove
2 tbsp tahini
1 tbsp lemon juice
1/2 tsp salt
Procedure
- Grill eggplant on the BBQ or over a flame on your gas stove until charred and the flesh is tender OR cut in half and poke holes and drizzle with olive oil and bake at 450°F for about 40 minutes.
- Scoop out the flesh and place in a food processor with all ingredients and process until smooth.
- Optional: garnish with cilantro, parsley, paprika, cumin, pomegranate or drizzle with olive oil.

Notes
- Grilling the eggplant on a bbq or open flame will give you a charred skin resulting in a smokier baba ganoush.
- The main difference between baba ganoush and moutabal is that moutabal is made with tahini and baba ganoush is made with onions and tomatoes and sometimes pomegranate molasses. So technically, the above recipe is for moutabal.
