Cinnamon Rolls

Ingredients

Dough

2 1/4 tsp yeast

1 cup milk

1/2 cup sugar

1/3 cup butter

1 tsp salt

2 eggs

4 cup flour

Filling

1/3 cup butter

3 tbsp cinnamon

1 cup brown sugar

Icing

1/4 cup cream cheese

1/3 cup butter

1 1/2 cup icing sugar

1/2 tsp vanilla extract

pinch salt

Procedure

  1. Warm the milk to about 95°F-100°F then add it to your stand mixer bowl with the yeast. Stir and let it sit for about 5 minutes.
  2. Add the sugar, melted butter, salt, and beaten eggs to the bowl and mix.
  3. Add flour and mix on slow speed with the dough hook attachment for about 10 minutes.
  4. Ball the dough and let it rest, covered for 1 hour or until doubled in size in an oiled bowl.
  5. Cut the butter, cinnamon, and brown sugar in a bowl so that you get a crumbly mixture.
  6. On a lightly floured surface roll out the dough to about 12″x16″ rectangle with the longer edge facing you.
  7. Sprinkle the mixture evenly over the dough to cover the entire surface.
  8. Roll the dough away from you and cut into 1.5″ slices.
  9. Place the cut dough in a greased 9″x13″ baking dish and let it rise again for another 30 minutes covered with saran wrap.
  10. Preheat the oven to 350°F and bake for about 25 minutes.
  11. For the icing, cream the cream cheese (softened) and butter (softened) together with the beater attachment until light and fluffy. Add the icing sugar, salt, and vanilla to the bowl and give it a stir before beating on high speed again.
  12. When the rolls are done and slightly cooled, spread each roll with icing.
