
Ingredients
3 eggs
1 cup sugar
1 cup sour cream
1/2 cup vegetable oil
2 tbsp lemon zest
2 tbsp lemon extract
1 1/2 cup flour
2 tsp baking powder
1/2 tsp salt
1 cup icing sugar
2 tbsp lemon juice
Procedure
- Preheat oven to 350°F
- Beat together the eggs, sugar, sour cream, and oil.
- Add lemon zest and lemon extract.
- Add flour, baking powder, and salt. Mix until just combined and do not over mix.
- Pour batter into a greased and floured loaf pan.
- Bake for 50 minutes.
- Allow to cool in a pan.
- Mix icing sugar with lemon juice.
- Pour the icing over the loaf and let it set before slicing into it.
