Lemon loaf

Ingredients

3 eggs

1 cup sugar

1 cup sour cream

1/2 cup vegetable oil

2 tbsp lemon zest

2 tbsp lemon extract

1 1/2 cup flour

2 tsp baking powder

1/2 tsp salt

1 cup icing sugar

2 tbsp lemon juice

Procedure

  1. Preheat oven to 350°F
  2. Beat together the eggs, sugar, sour cream, and oil.
  3. Add lemon zest and lemon extract.
  4. Add flour, baking powder, and salt. Mix until just combined and do not over mix.
  5. Pour batter into a greased and floured loaf pan.
  6. Bake for 50 minutes.
  7. Allow to cool in a pan.
  8. Mix icing sugar with lemon juice.
  9. Pour the icing over the loaf and let it set before slicing into it.
