Orange Cardamon Madeleines

Ingredients

1/3 cup butter

1 tsp cardamon

zest of 1 small orange

1/2 cup flour

1 tsp baking powder

pinch salt

2 eggs

1/3 cup sugar

1 tsp vanilla

3 tbsp honey

3 tsp orange juice

Procedure

  1. Melt the butter in a saucepan with cardamon and orange zest and set aside.
  2. Mix flour, baking powder, and salt together and set aside.
  3. Beat together the eggs, sugar, and vanilla.
  4. Add the flour mixture to the egg mixture and mix until combined.
  5. Add the cooled butter, cardamon, and orange mixture and mix until combined.
  6. Cover with plastic wrap and refrigerate for at least 1 hour.
  7. Preheat oven to 400°F
  8. Prepare the honey orange simple syrup by warming up honey with orange juice in a small sauce pan.
  9. Prepare the madeleine pans by brushing each cavity with butter and dusting with flour.
  10. Fill each madeleine cavity to about 2/3 full.
  11. Bake for about 10 minutes or until they are golden brown around the edges.
  12. Unmould the madelines, and brush with orange honey glaze.

Notes

  • I used the juice of the zested orange for the orange honey simple syrup.
