
Ingredients
1/3 cup butter
1 tsp cardamon
zest of 1 small orange
1/2 cup flour
1 tsp baking powder
pinch salt
2 eggs
1/3 cup sugar
1 tsp vanilla
3 tbsp honey
3 tsp orange juice
Procedure
- Melt the butter in a saucepan with cardamon and orange zest and set aside.
- Mix flour, baking powder, and salt together and set aside.
- Beat together the eggs, sugar, and vanilla.
- Add the flour mixture to the egg mixture and mix until combined.
- Add the cooled butter, cardamon, and orange mixture and mix until combined.
- Cover with plastic wrap and refrigerate for at least 1 hour.
- Preheat oven to 400°F
- Prepare the honey orange simple syrup by warming up honey with orange juice in a small sauce pan.
- Prepare the madeleine pans by brushing each cavity with butter and dusting with flour.
- Fill each madeleine cavity to about 2/3 full.
- Bake for about 10 minutes or until they are golden brown around the edges.
- Unmould the madelines, and brush with orange honey glaze.

Notes
- I used the juice of the zested orange for the orange honey simple syrup.
