Granola Bars

Ingredients

2 1/2 cups oats

1/2 cup almonds, chopped

1/3 cup honey

1/4 cup brown sugar

1/4 cup butter

1/4 tsp salt

1/2 tsp of cinnamon

1/3 cup dried cranberries

1/3 cup chocolate chips

Procedure

  1. Preheat the oven to 350°F
  2. On a lined cookie sheet roast the almonds and oats for about 10 minutes, until lightly toasted, mixing halfway through the bake time.
  3. In a small saucepan add the honey, brown sugar, butter, and salt. Cook over medium heat, stirring occasionally until the sugar dissolves
  4. Add the almonds and oats and cinnamon into a large mixing bowl and stir. Pour the sugar mixture on top and stir until oats are evenly coated. Add the cranberries and stir again.
  5. Add half to 2/3 of the chocolate chips into the mixture and stir again.
  6. Pour the mixture into a parchment lined baking dish and press firmly with the back of a spoon or measuring cup.
  7. Add the rest of the chocolate chips on top and press firmly into the bars. Pressing firmly will ensure that the bars don’t fall apart once cooled.
  8. Cover and let them cool for at least 2-3 hours before cutting them into bars.

Notes

  • Feel free to substitute out any of the ingredients. You can add cashews or brazil nuts instead of almonds or add dried cherries or blueberries if you prefer that to cranberries. Or throw in some sunflower or pumpkin seeds.
  • Keep them stored in an airtight container for up to 1-2 weeks.
  • These bars can also be frozen.
