Ingredients
1 1/2 cups white sugar
1/2 cup butter
3 eggs
1 1/2 cup flour
1/2 cup whipping cream
1 tsp vanilla
pinch salt
Procedure
- Preheat the oven to 325°F
- Grease and flour a loaf pan.
- Beat the sugar and butter together until light and fluffy.
- Whisk in eggs, one at a time beating well after each addition.
- Add half the flour, then the whipping cream, then the rest of the flour.
- Add the vanilla and salt and mix.
- Pour batter into the prepared loaf pan.
- Bake for 1 hour and 15 minutes. Check doneness with a cake tester (you can use a knife or a wooden skewer). The cake is fully cooked if the tester inserted in the middle of cake comes out clean.
- Let the cake cool in the pan for at least 30 minutes.
Notes
- This recipe is great for using up whipping cream or whipping cream that has been frozen and thawed and separated (don’t throw it out!).
