Old Fashioned Donuts

Ingredients

2 1/4 cup flour

1 1/2 tsp baking powder

1 tsp salt

1 tsp nutmeg

1/2 cup sugar

2 tbsp butter

2 egg yolks

1/2 cup sour cream

frying oil

3 1/2 cup icing sugar

1 1/2 tsp corn syrup

1/2 tsp vanilla

1/4 water

Procedure

  1. Mix together the flour, baking powder, salt, and nutmeg and set aside.
  2. Beat together the eggs and sugar with a paddle attachment.
  3. Add egg yolks one at a time.
  4. Add the sour cream and continue to mix.
  5. Add the dry and mix until combined.
  6. Chill the batter for 1 hour. Batter can be chilled up to 1 week.
  7. Roll the dough out into 1/2 inch thickness and cut out donut shapes.
  8. Chill the donuts for 30 minutes before frying.
  9. To make icing, mix together icing sugar, corn syrup, vanilla, and water.
  10. Heat your frying oil to 325°F to 340°F.
  11. Fry for 1:15 minutes on each side.
  12. Coat the donuts in icing while still warm.
  13. Let icing set and cool donut on a cooling rack.

Notes

  • Give your donuts breathing room in your fryer. They don’t like to be overcrowded.
  • Remember to check the temperature of the frying oil frequently. Dropping cold donuts into the frying oil may drop your oil temperature and your cooking times.
